I've lived in japan for 22 years. never seen a place that makes it so good. imagine a “organic” or “farm to table” restaurant, as produced by the small town Japanese folk with stdio ghibli ability. the only possible disadvantage can be the (odd) people who simply cannot do traditional Japanese food, or think this is a bit small for the price. it may be, but I would take this seriously, similarly expensive first-class...
