What Samuel Salcedo doesn't like about Food Service Investment S.A.C.:

Fui y pedí a la carta. Recomiendo esta dinámica para poder probar distintos platos a su gusto. Excelente comida Nikkei, excelente carta de tragos y excelente atención.
Food was truly exceptional. Wine program is excellent under the head sommelier Florencia. Only issue to consider is the same one raised by other reviewers as it relates to service charges. When the bill came, I asked explicitly if service was included in the tasting...menu and the waiter said no and asked if we could tip in cash. Therefore tipped generously to US standards assuming that the 10% base tip wasn’t included (which other restaurants in Peru did for US visitors knowing that we typically tip higher than the 10% . Turns out a service charge was embedded in the prix fixe price (and not shown as a service charge so in short left way too much. Overall left a bad taste after a truly stunning meal.
We dined at Maido on the last night of our 3-week trip to Peru and it was the cherry on top of a wonderful time in a beautiful country! The two of us both enjoyed the chef 's tasting menu and my husband also had the...wine pairing. Since the tasting menu varies daily, it 's difficult to review individual dishes, but, suffice it to say, that we thoroughly enjoyed our dining experience! I especially enjoyed the Amazonic potato snack, the Tempura fish with native potato sauce, and the bivalves with seafoam and crackers. Both desserts were outstanding as well: the creative serving of ice cream in a coconut shell and the chocolate yumminess with nuts and mochis. If you 're in Lima and can score a meal at Maido, go for it! It 's worth the time and money.
I was told that Peru offered a radical approach to fusion cuisine called ‘Nikkey’. By nature, I tend to distrust fashionable epithets. However, right after the first course and all through lunch my prejudice broke into pieces. There is very little to say when cooking verges perfection: Mitsuharu-san is a master! The perfect harmony between flavours and the balanced contrasts in textures remind me of Martin Berasategui. Maido is the place in southern hemisphere for food lovers and true gastronomes.Not to be missed.
I had no expectations with Maido and they recommended the 200-miles menu. Let me tell you something: AMAZING. Concentrated flavors in each dish and with the help of the Sommelier, this is an experience you should never miss. MAIDO is a MUST stop when coming to Lima or living here. They deserve better ranking and I know they will get it this year
