Sushi Wakon - Feedback

Amazing Grandmakase dinner! We sat at the counter, right in front of the chef who prepared our dishes and it was a very nice, personal experience. It is great to see how the fish is cut perfectly and how the sushi is rolled with so much care. You could really taste that everything was super fresh and high quality. The fish were very very fresh. But I felt the rice had too much vinegar. The first nigiri was loaded with so much vinegar (as the same with the rest of the meal) that I couldn't really taste the fish. As the meal goes on, and the heavier the flavour the fish, I suppose the amount of vinegar matches with the fish at the end. But I'm not sure if it's because I got used to the super sour taste?
